Papad Mangodi ki Sabzi is an authentic Rajasthani household dish which you can easily prepare at your home. This dish is best when you have very less ingredients in your home. This dish is delicious and flavorful and also has a distinct flavor and taste. This dish is perfect for a weekend lunch or dinner and can be served with roti, paratha or plain rice. Let’s follow this recipe.

Ingredients

  • 6 medium sized raw urad dal papads, broken into small pieces ( easily available in the market)
  • 1 cup coarsely crushed moong dal Mangodi ( easily available in the market)
  • 1 cup curd (dahi)
  • 2 tsp chili powder
  • 4 tsp coriander (dhania) powder
  • 1 tsp dried mango powder (amchur)
  • 1/4 tsp turmeric powder (haldi)
  • 2 tbsp oil
  • 1 tsp cumin seeds (jeera)
  • 1/2 tsp mustard seeds ( rai / sarson)
  • a pinch of asafoetida (hing)
  • salt to taste

Directions

  1. In a bowl, add curd, chili powder, coriander powder, dried mango powder, turmeric powder and 1 cup of water and mix it well with a help of a whisk and keep it aside for the later use.
  2. Heat 1 tbsp of oil in a pressure cooker, add the coarsely crushed mangodis and fry on a medium flame for 2 to 3 minutes.
  3. Add 1 cup of water, mix it well and cook for 25 min and switch off the flame and allow the steam to escape before opening the lid and keep it aside.
  4. Heat the 1 tbsp of oil in a deep non-stick pan, add the cumin seeds, mustard seeds and asafoetida and fry on a medium flame for a few seconds.
  5. Switch off the flame, add the curd mixture, cooked Mangodi and salt and mix it well.
  6. Switch on the flame and cook on a medium flame for 2 minutes and stir occasionally.
  7. Add the papad, mix it well and cook on a medium flame for 1 minute and stir occasionally.
  8. Once done, switch off the flame and serve it with steamed rice.
