Bite a biscuit while reading the newspaper or sitting and watching the busy streets from your balcony. Some of us like it sweet while the rest of us enjoy it salty. Most of us bake cakes and try appetizers but not all of us think of storing biscuits at home. It is fun to try biscuit recipes and relish different flavors.

No 1 – Nan Khatai Biscuit Recipe

Nan Khatai are salted and sweet butter cookies that can be eaten plain or dipped in garam chai (hot tea). Is your mouth already watering? Here’s a recipe of tasty nan khatai’s for your home!

You will need

  • ½ cup Maida
  • 1 cup powdered sugar
  • 2 tbsp besan(gram flour)
  • Quarter tsp baking powder
  • Quarter tsp baking soda
  • 4-5 tsp ghee
  • 1 cup milk
  • 3-4 tsp butter
  • Elaichi powder 2 tsp –optional
  • 5-6 crushed almonds

Method

  1. In a bowl, add Maida, powdered sugar, besan, baking powder, baking soda and elaichi. Stir this dry mixture well.
  2. In another bowl, add milk, ghee, butter, almonds and stir them well.
  3. Mix all these dried ingredients into the milk mixture and make it a consistent dough to bake the butter nan khatai’s.
  4. Check the consistency, it should neither be too thick nor thin.
  5. Gather all the batter and mix it well one last time before you make the balls.
  6. Now pull out some batter and make medium size balls.
  7. After you make the balls, gently press all the balls with both your palms, bake them in the oven or heat them up for 20 minutes in the microwave.

No 2 – Jeera Biscuits (Roasted cumin seeds)

Jeera biscuits look lovely and even taste nice. If you prefer munching on salted biscuits instead of sweet, you should go for jeera biscuits. Here’s a recipe of jeera biscuits for everyone at home!

You will need

  • Milk – 2 tbsp
  • Butter – 1/2cup
  • Sugar – 2 tbsp
  • Maida – 1 ½ cup
  • Salt as per your taste
  • Cumin seeds – 1 tbsp

Method

  1. In a bowl, take sugar and butter. Use a spatula and stir this mixture until color of the butter is light.
  2. Take another bowl, mix plain flour, salt and cumin seeds. Transfer this into the bowl that has sugar and butter.
  3. Mix them all together, knead it well and make it a good dough. This should neither be thick nor thin. It should be soft and semi-stiff when you touch it.
  4. Roll the entire dough flat and cut them into medium size squares. You may get 20 to 25 pieces.
  5. Preheat the baking tray, grease it with oil or butter and places them all in a line.
  6. Let these cookies bake well for 20-25 minutes.
  7. Allow it to cool down for a while and put these cookies in a container.

No 3 – Jam Biscuits

If you have a sweet tooth and love the soft fruits flavor melting in your mouth, you should make jam biscuits and store them in a nice air tight container.

The interesting part about jam biscuits is that it gives you a crunchy and a delicious sweet taste at the same time. What a yummy and interesting combination, isn’t it? Here’s a recipe of sweet jam biscuits!

You will need

  • Raspberry jam – 8 tsp
  • Maida – 1 cup
  • Corn flour – ¼ cup
  • Pinch of salt
  • Butter – 1/4th cup
  • Powdered sugar – 5 tbsp
  • For rolling you will need a little more Maida

Method

  1. In a bowl, mix corn flour, salt and plain flour.
  2. Add butter into this mixture and gently blend it with your fingers.
  3. Add a little ice water, knead it and make the dough.
  4. For 15 minutes, place this dough in the refrigerator.
  5. Roll the entire dough flat and see to it that you don’t roll it too thin.
  6. Cut the dough with a round biscuit cutter or use a bowl for the right shape.
  7. Grease the baking pan.
  8. Place all the biscuits in a row and bake it for 20 minutes.
  9. Once all the hot biscuits have cooled down, store them in a box.
